JPG is the default because it produces much smaller files and suits most documents and photo-heavy pages — the quality slider lets you trade file size for sharpness. PNG is lossless and keeps text and line art pixel-crisp, which is better for diagrams, screenshots or anything with hard edges, at the cost of a larger file. If you are not sure, start with JPG at a high quality setting.

You pick the resolution. 1x renders each page at its nominal size (about 72 DPI, fine for screens and quick previews), and 2x doubles that (about 144 DPI, sharper and the better choice if you plan to zoom in or print). A standard A4 page at 2x comes out around 1190 × 1684 pixels. Higher resolution produces larger files and takes a little longer on long PDFs.

Yes — this tool renders each page as a picture, so it works the same whether the PDF is a scan (a photograph of paper) or a normal text document. That is different from the PDF to Text converter, which needs a real text layer and cannot read scans at all. If your PDF is a scan and you actually need the words, you would need an OCR tool, not an image converter.
