Why does 7 come up most often with 2 dice?
Because more combinations make 7 (1+6, 2+5, 3+4 and their reverses) than any other total, so it appears about one roll in six. The tool is fair, so over many rolls you will see this natural distribution. Across a few thousand rolls the totals settle into the familiar 2-to-12 pyramid, with 7 near one roll in six and 2 or 12 near one in thirty-six.
What are the odds of each total with two dice?
Two six-sided dice have 36 equally likely combinations, so a total of 7 has six of them (about 16.7%), 6 and 8 have five each, and 2 or 12 has just one (about 2.8%). Doubles account for six of the 36 combinations, or one roll in six. Those odds come from the dice themselves, not from the tool, so they hold for any fair pair.
Can I roll more than two dice here?
